Why Your Matcha Arrives Dull in the UAE: Attributing Colour and Flavour Loss to a Specific Leg of the Japan→UAE Chain

If you buy matcha for outlets in Dubai, Abu Dhabi or Sharjah, you have probably had this conversation more than once. A lot that looked vivid in the supplier's photographs arrives khaki. A powder that whisked cleanly last quarter cakes in the tin. An iced latte that used to taste round and sweet now tastes thin and papery, and the barista blames the powder while procurement blames the barista.

The instinct at that point is to move up a grade. That is often the most expensive way to not fix the problem. Grade determines the ceiling of what a powder can taste like on the day it is packed. It does very little to determine how much of that ceiling survives a Japanese origin warehouse, a container crossing the tropics, a clearance dwell at Jebel Ali or DXB, a non-chilled trade-zone bay, a van at midday and an opened pack sitting behind a busy bar.

This article is about separating those two things. Not with a lab, but with three samples, one whisking protocol and a worksheet you can attach to your next RFQ.

The four handovers where matcha actually degrades

Matcha is a fine, unroasted, high-surface-area green powder. The four things that damage it are heat, oxygen, moisture and light. None of these are exotic claims — they are the same reasons any delicate ground plant material loses colour and aroma, and they need no citation. What is specific to the UAE is how many opportunities the product gets to meet all four on one journey.

Think of the journey as four handovers rather than one shipment:

  1. Origin holding and stuffing. The powder sits in the supplier's or forwarder's warehouse, is taken out to be packed into cartons, and is loaded into a container or ULD. Every one of those steps is a chance for the pack to warm up and for opened bulk to meet humid air.
  2. Transit. Sea freight from Japan to Jebel Ali crosses tropical latitudes. Air freight via DXB is shorter but includes tarmac and ramp exposure at both ends. A dry container is not a temperature-controlled space; it tracks and often exceeds ambient.
  3. Arrival, clearance and dwell. Cargo waits. Sometimes in shade, sometimes not, sometimes in a bonded or free-zone facility that is ventilated rather than climate-controlled.
  4. Local distribution and the opened pack. Last-mile vans in summer, back-of-house shelves near ovens or dishwashers, and tins that are opened and reclosed twenty times a shift.

Grade is decided before handover one. Everything else in the list can ruin a good grade and none of it can be fixed by paying more per kilogram.

Reading the defect: what each leg tends to leave behind

Different stressors leave different fingerprints. In our own handling and customer-complaint experience these associations hold up well enough to be useful for triage — they are working heuristics, not measured values, and you should confirm them against your own samples rather than treat them as a rule:

  • Khaki or brownish surface colour, with the interior of the pack still greener. Points to oxygen and light contact at the pack surface — packaging integrity, headspace, or a pack that was opened and reclosed. If the whole mass is uniformly dull, the exposure was longer and more thorough, which points at transit or dwell rather than a single opening.
  • Clumping and caking that breaks up into hard granules. Points to moisture. Matcha picks up ambient humidity readily, and a pack cycling between a cool store and a hot bay will drive condensation inside the pack. This is the most reliable signature of a warehouse or last-mile problem rather than a grade problem.
  • Colour still acceptable, but the taste is hollow and short in milk. Aroma-driven character fades before colour does in our experience, so a powder can look sellable and still taste flat. This pattern usually points to accumulated warm time rather than to a single event, and it is the one most often misdiagnosed as "the supplier downgraded us."
  • A dry, hay-like or stale note. Typically the late stage of the same process: long warm storage, often after the pack has been opened.

Because that third signature is the one that triggers most re-tenders, it is worth asking for one extra data point on every delivery: the production or packing date, not just the best-before date. A best-before date tells you what the supplier is willing to guarantee. A packing date tells you how much of the powder's life was already spent before the container doors closed. Two lots with the same best-before date can have very different histories.

The three-sample protocol

Attribution requires comparison, and comparison requires that only one variable changes at a time. The protocol below is deliberately crude; the point is repeatability, not precision.

You need three samples of the same lot:

  1. Origin retain. A sealed sample of the exact lot, in the exact packaging format intended for your shipment, held by you or shipped separately and kept cool and dark from the day it is packed. This is your reference. Without it, everything else is guesswork.
  2. Arrival sample. Drawn from the delivered stock on the day it reaches your warehouse, before it enters your storage routine.
  3. Plus-30-days sample. Drawn from the same delivered stock after it has lived in your actual storage and handling conditions for a month, including at least a few pack openings if that reflects real use.

Fix these variables before you taste anything:

  • Same gram dose, weighed, for every cup. Volume scoops are not comparable.
  • Same water temperature, measured with the same thermometer, every time. This matters more than most people expect: in our own tasting sessions, changing water temperature has shifted perceived bitterness and body enough to swamp the difference we were trying to detect. That is an observation from our tasting practice, not a measurement, but it is reason enough to control the variable.
  • Same water. If your outlets run filtered or RO water, use that, not bottled.
  • Same whisking or blending method and duration.
  • Same lighting for the colour check, ideally daylight or a fixed daylight-balanced lamp, against a white background. Warm-toned back-of-house lighting will hide exactly the shift you are looking for.
  • Taste both neat and in your actual milk build, at your actual ratio. Some faults only appear in milk.

Then read the result:

  • Origin retain and arrival sample are both good; plus-30 is off. Your problem is local. Storage temperature, humidity, pack size versus consumption rate, or opened-pack handling at outlet level. Buying a higher grade will not help; it will degrade the same way, just more expensively.
  • Origin retain is good; arrival sample is already off. Your problem is upstream — packaging specification, stuffing conditions, transit or dwell. This is where contractual changes belong.
  • Origin retain itself underwhelms you. Only now is grade a legitimate suspect. Re-tender on product, and ask for retains from more than one supplier so you are comparing like with like.

Run this once and you convert an argument between procurement, logistics and operations into a decision.

The four-handover attribution worksheet

Copy this into a single page and fill one row per delivery. The value is in the last column: it turns a complaint into a clause.

Leg 1 — Origin holding and stuffing

  • Defect signature: Powder already dull or already clumped in the arrival sample, across the whole consignment rather than in isolated cartons.
  • Evidence that proves it: Packing date versus shipping date. Origin retain sample. Supplier's statement of storage conditions between packing and stuffing.
  • What to request in the next RFQ: Maximum days between packing and container stuffing. Cool, dark holding between the two. Nitrogen-flushed foil-laminate packs. A sealed, dated retain sample of the shipping lot sent with every order.

Leg 2 — Transit

  • Defect signature: Arrival sample dull or flat relative to origin retain; damage uniform across the container; sometimes worse in cartons stowed near the doors or the container roof.
  • Evidence that proves it: A temperature and humidity logger placed inside the container at stuffing, with the download referenced on the shipping documents. Stow position notes.
  • What to request in the next RFQ: Logger in every container, download supplied on arrival. Reefer or insulated LCL where volumes allow. Smaller unit packs so that opened-pack exposure downstream is shorter. Palletised stow away from container walls where possible.

Leg 3 — Arrival, clearance and trade-zone dwell

  • Defect signature: Arrival sample fine on day of discharge but degraded by the time it reaches your own warehouse; or long, unexplained gaps between vessel arrival and delivery.
  • Evidence that proves it: Discharge date versus gate-out date versus your receipt date. The logger, if it stays with the cargo through clearance. The facility's own temperature log, if it keeps one.
  • What to request: This is a forwarder and 3PL conversation more than a supplier one. Specify climate-controlled storage for any dwell beyond a stated number of days, ask your facility whether it logs temperature at all, and make sure the logger travels to your door rather than being pulled at the port.

Leg 4 — Local distribution and the opened pack

  • Defect signature: Arrival sample good, plus-30 sample off. Variation between outlets receiving the same lot. Faster deterioration in high-volume outlets with long-open tins, or in outlets storing powder near heat sources.
  • Evidence that proves it: Your own storage logs. Outlet-by-outlet comparison of the same lot. Consumption rate versus pack size.
  • What to request: Pack sizes matched to each outlet's weekly usage rather than to the best price per kilogram. Resealable or single-use formats for low-volume sites. A written back-of-house rule on where the tin lives and how long an opened pack may stay in service.

Paperwork that interacts with the problem

Two administrative realities can compress the usable life of a shipment, and both are worth checking before you blame the product.

Remaining shelf life at the point of import. Some importing authorities require that food arrive with a defined proportion of its shelf life still unused. Whether such a requirement applies to your product, at what threshold, and how it is calculated for dry powders is a question for the competent UAE authorities — practically, MOCCAE and Dubai Customs, plus the food safety authority of the relevant emirate. We are not in a position to state a current figure, and you should not plan around one you have not confirmed in writing for your HS code and product category at the time of shipment. What matters for this article is the interaction: if a threshold does apply to you, a long packing-to-stuffing gap and a slow transit do not just degrade the powder, they can also consume the margin you need to clear it.

Labelling, Halal and certificate expectations. Requirements for label language, Halal registration and accompanying certificates are not necessarily the same for bulk B2B packs as for retail-ready packs, and we cannot state their current content or when they were last amended. Confirm the applicable requirements with the relevant UAE authorities and, where the buyer is reselling, with the retail customer's own compliance team, at the time of shipment rather than at the time of tender. If your supplier is quoting a lead time that assumes no re-labelling, and re-labelling turns out to be needed, the shipment sits somewhere warm while it is sorted out.

Neither of these is a reason to avoid the market. They are reasons to treat "days from packing to shelf" as a number you actively manage rather than one you discover after the fact.

What to do before your next tender

The sequence that saves money is: prove the chain is clean, then talk about grade.

  1. Ask your current supplier for a sealed, dated retain sample of the exact lot and packaging format they would ship you, and hold it properly.
  2. Put a logger in the next container and insist the download reaches you.
  3. Run the three-sample protocol with fixed dose, water temperature and lighting.
  4. Fill the worksheet and identify which handover the defect belongs to.
  5. Fix that handover contractually. Only then revisit grade.

There is one step in that list you cannot complete on your own. The origin retain sample has to come from the supplier, it has to be the real lot in the real packaging, and it has to be dated. Without it, the arrival and plus-30 comparisons have no reference point and you are back to opinions.
