You already sell Wagyu. Your guests read "Wagyu" on the menu, your retail customers see it on the label, and the carcasses behind it are Australian F1 to Fullblood at MB7 to MB9, bought on terms you negotiated years ago. Nothing about that is broken. So the honest question is not whether Japanese A5 is good — it is whether a second, more expensive Wagyu line has any position at all on a list that is already Wagyu.

This article answers that question cut by cut, starting from the domestic marble-score spec you already own, and it stops at the point where you would request a price. The claim, stated plainly

For a buyer already stocking MB7 to MB9 domestic Wagyu, Japanese A5 earns a second SKU on a narrow band of cuts — the thin-sliced, high-surface applications where fat behavior at low portion weight is what the guest actually perceives. On thick-cut steakhouse applications, the domestic line usually holds the position at a lower landed cost, because the thing you would be paying extra for is diluted by portion weight.

That means the decision is made per cut and per application, not origin against origin. A blanket "we've moved to Japanese A5" and a blanket "Australian is fine for everything" are both wrong for the same reason: they answer at the wrong level of detail.

Two scales, and why you cannot map one onto the other

Your domestic spec is an AUS-MEAT marbling score; the Japanese spec is a JMGA yield grade plus quality grade, with the quality grade resting in part on a Beef Marbling Standard number. Both describe intramuscular fat. They are not the same measurement, they are not assessed on the same site or under the same chilling and rib-cut conventions, and there is no published conversion that makes MB9 equal to any particular BMS value.

Rather than repeat a conversion table you should not trust, fix the scales at the source before you compare anything:

  • For the Japanese side, read the grading standard published by the Japan Meat Grading Association (JMGA) — jmga.or.jp — which sets out how yield grade (A/B/C) and quality grade (1 to 5) are determined and how the Beef Marbling Standard is used within the quality grade.
  • For the Australian side, read the AUS-MEAT language and chiller-assessment material at ausmeat.com.au and the marbling material published by Meat Standards Australia at mla.com.au, which define how marbling scores are assigned and reported.

Practical consequence for procurement: never accept "equivalent to A5" as a spec line. Ask for the actual grade designation and, where the supplier reports it, the marbling figure behind it. If a quote does not name the scale it is using, the quote is not comparable to your domestic contract, whatever the number looks like.

Where the difference survives portioning — and where it does not

This is the part that usually gets skipped. A premium expressed per kilogram does not land on the guest per kilogram. It lands per portion, and the same premium behaves very differently depending on how much meat is on the plate and how it is cooked.

Think about it as surface area against mass. In a thick-cut grill portion, most of the meat is interior. The intramuscular fat renders, some of it stays in the muscle, and the guest experiences a large piece of well-marbled beef — a description that already fits your MB9 domestic line honestly. In a thin slice, almost all of the meat is surface. The fat is exposed to heat immediately, it renders on contact, and the eating experience is dominated by fat behavior rather than by muscle texture. That is the band where a higher marbling level is visible to the person paying for it.

So the applications split roughly like this:

  • Thin slice, high surface, low portion weight — shabu and hot-pot service, two- or three-slice yakiniku plates, sando fillings, seared tartare and crudo garnishes, thin-sliced additions to a rice or noodle bowl. These are where A5 tends to justify a second SKU, and also where a small portion weight keeps the per-plate cost defensible.
  • Thick-cut grill and roast — cube roll and tenderloin steaks, rump portions, anything served as a single substantial piece of beef. Here the domestic line usually holds, because the extra marbling is averaged across a mass of meat and the landed-cost gap goes straight into food cost without a matching change in what the guest notices.

Offered as a starting hypothesis for your own trial and not as a measured threshold: the lighter the portion and the thinner the slice, the more likely the A5 premium is perceived; the heavier and thicker the portion, the more likely your domestic line already wins on cost. Where exactly your own crossover sits depends on your cooking method, your service style and your guests — which is why the next section asks you to test it rather than take a number from an article.

In our own handling experience across per-cut export orders, buyers who run this comparison on a small trial commonly narrow their shortlist from a whole catalogue down to two or three cuts. That is a pattern we have observed in how orders develop, not a measured result, and it should not be read as a prediction about your menu.

The Dual-Line Cut Allocation Sheet

Build one row per cut that is currently on your menu or in your catalogue. The point of the sheet is to force the comparison down to cost per portion, which is the only level at which the two origins are actually competing.

Columns, left to right:

  1. Cut — your own name for it, plus the AUS-MEAT item description you buy against.
  2. Current domestic spec — marble score, grainfed days, breed content, supplier.
  3. Application — thick-cut grill / thin slice / shabu / tartare / sando.
  4. Portion weight served — weigh a real plated portion, three times, and use the average. Do not use the spec sheet figure.
  5. Landed cost per kg, domestic — your invoiced price plus inbound freight and storage as you actually book them.
  6. Landed cost per kg, Japanese A5 — leave blank until you hold a real quote. Estimating this column is how the whole exercise goes wrong.
  7. Trim loss % — weigh the primal in, weigh the saleable portions out, take the difference over the input weight. Do this separately per origin: fat cover and seam fat differ, so the same cut name does not trim identically.
  8. Cook loss % — weigh the portion raw, cook it exactly as service cooks it, weigh it again, and divide the loss by the raw weight. This is application-specific; a shabu slice and a thick grill portion of the same cut will not match.
  9. Cost per portion, each line — landed cost per kg, divided by 1 minus trim loss, divided by 1 minus cook loss, multiplied by portion weight in kilograms. Run it for both origins.
  10. Decision — KEEP DOMESTIC / SWITCH TO A5 / RUN BOTH AS TIERS.

The third decision outcome is the one most buyers underuse. Running both as tiers keeps your domestic line as the volume position and places A5 on one or two specific, small-portion dishes where the premium is visible and can be priced openly. That is usually a smaller commitment than switching a whole category, and it gives you a real comparison in front of real guests.

Fields you must fix before asking for a comparable price

A quote that omits any of these cannot be placed in the sheet, because you will not know what you were priced for:

  • Grade designation — the actual Japanese grade, and the marbling figure behind it where the supplier reports it.
  • Cut name, unambiguously — name the muscle, not just the retail term. Cut nomenclature differs between markets and "sirloin" is not a safe word across both.
  • Chilled or frozen — this changes freight mode, shelf life, thin-slicing behavior and price. Decide it per cut, not for the whole order.
  • Pack size and portion format — whole primal, sub-primal, or pre-sliced to a stated thickness. If you want thin slices, state the thickness in millimetres; if you will slice in-house, say so, because that moves the trim loss onto your side of the sheet.
  • Quantity per cut — the sheet only needs two or three cuts tested, so quote only those.

On duty and tariff treatment: rates and preferential arrangements change, and the position that applies to your entry depends on classification and documentation. Confirm the current treatment with the Australian Border Force or your customs broker rather than working from a figure in any article, including this one.

The next step is narrow on purpose

You cannot finish the sheet without a real landed figure for the specific cuts you shortlisted — and the shortlist should be short. Pick the two or three cuts where your own thin-slice or small-portion applications sit, fix grade, cut name, chilled or frozen, and pack size for each, and ask for a wholesale price on those cuts only. It is the smallest test available to a buyer who already has a working domestic Wagyu supply, and it either fills the empty column in your sheet or tells you the domestic line keeps the position.
